2 tablespoons canola oil
7 onions, sliced
2 cloves garlic, crushed
1 (32 fluid ounce) container beef broth
1 (32 fluid ounce) container chicken broth
1 (12 fluid ounce) can pale ale
1 teaspoon ground black pepper
2 bay leaves
6 slices French bread
3 tablespoons shredded mozzarella cheese, or to taste
3 tablespoons grated Parmesan cheese, or to taste
How to Make Easy And Amazing French Onion Soup
Heat vegetable oil in a large pot or Dutch oven over medium heat. Add onions; cook, stirring frequently, until well browned, about 20 minutes. Add garlic; stir constantly for 1 minute. Pour in beef broth, chicken broth, and pale ale. Stir black pepper and bay leaves into the soup.
Bring soup to a simmer. Cover and simmer until flavors combine, about 30 minutes.
Set oven rack about 6 inches from the heat source and preheat the ovens broiler on low. Spread French bread slices on a baking sheet.
Broil French bread slices until very lightly toasted, 30 seconds to 1 minute. Divide mozzarella cheese and Parmesan cheese evenly over bread.

This is the author. You really need to cook the onions till it is a bronze brown colour. If you do not, it will not have a depth of flavour. Spices will not really replace that. Hope that helps
Great simple French Onion soup Made it several times..fail proof
I halved the recipe and used four large onions and the onion flavour didnt come through. I believe that the ratio of liquid to onion is off and it needs seasonings, salt and thyme perhaps. The onions took a good 40 minutes to caramelize with the sugar added. I really dislike leaving a bad review but this didnt appeal to us.
