Vegan Protein Pancakes with Blueberries

I just started a low-calorie, low-carb diet and hated having to cut out flour from my cooking. I decided to try and make vegan pancakes with protein powder instead and they actually turned out surprisingly delicious You can use any flavor of protein powder too: Ive tried vanilla, strawberry, and chocolate so far. Strawberry and chocolate have been my favorites Tastes delicious with a hot cup of tea or coffee or even with a chilled glass of almond milk

Vegan Protein Pancakes With Blueberries Ingredients

  • 4 scoops vanilla protein powder

  • 1 cup almond milk

  • 1 teaspoon vanilla extract

  • 2 (1 gram) packets stevia powder

  • teaspoon salt

  • nonstick cooking spray

  • 50 fresh blueberries

  • cup water

How to Make Vegan Protein Pancakes With Blueberries

  1. Gradually add protein powder to almond milk in a medium bowl and whisk to combine. Add vanilla extract, stevia powder, and salt.

  2. Heat up a skillet over low heat and spray with nonstick spray. Pour in some batter in a round and let cook until set, about 2 minutes. Flip and cook for 2 minutes on the other side. Transfer to a plate. Repeat with remaining batter.

  3. Place blueberries and water in a mug. Heat in the microwave, stirring and mashing berries at 30-second intervals, until soft and syrupy, about 2 minutes total. Pour syrup over pancakes.

Vegan Protein Pancakes With Blueberries Reviews

  • This was a total failure and disaster. The pancake kept spreading and spreading until it was paper thin. Stuck to my cast iron skillet even though was very well greased. I am so glad I did not do the blueberry syrup because that would have been a total waste also. Very disappointed. If I could give this a negative rating, I would.
